Quixotic Projects is the creator, owner and operator of Candelaria, Le Mary Celeste, Glass and Hero, four eating and drinking establishments in Paris. Four different creative concepts, each one inspired by various passions and personal experience. Quixotic Projects also conducts consulting for international brands and executes events in Paris and Europe. The three partners, Carina Soto Velasquez, Joshua Fontaine, and Adam Tsou, bring together more than 40 years of hospitality experience.
Candelaria combines Paris’ first authentic Mexican taqueria with a world-class cocktail bar specializing in agave spirits. The taqueria offers traditional Mexican tacos in a warm and convivial atmosphere. The cocktail bar has been recognized as a top destination by World’s 50 Best Bars and Tales of the Cocktail. Glass is a neighborhood dive bar celebrating great cocktails, cold beer, lively music and American whiskey. Located in the colorful and historic Pigalle, Glass’s offerings range from hot dogs and pickles to specialty beers and cocktails on tap. The heart of Glass beats to artist Adrian Rubi-Dentzel’s light-up floor, which serves as a permanent living art installation. Glass is both a place to let go and relax and to gear up for some serious dancing.
Le Mary Celeste is a bar and restaurant where locally sourced produce, seafood, and meats (and a bit of spice) complement a natural wine list and cocktails designed with conviviality and drinkability in mind.
